Bruschetta Chicken and Potatoes feat. ChickenShit

If you're into easy, healthy, and delicious, then this recipe checks all the boxes. It's easy to throw together on a busy weeknight and tastes so good!

Ingredients

Chicken and Potatoes
* 4 boneless, skinless chicken breasts
* 1 lb of baby red potatoes, cut in half
* 2 Tbsp olive oil
* 3 tsp ChickenShit
* 1/3 cup grated Parmesan
* 4 oz mozzarella cheese, cut into 4 slices

Bruschetta topping
* 2 cups cherry tomatoes, cut in half
* 2 Tbsp olive oil
* 1 Tbsp balsamic vinegar
* 2 cloves garlic, minced
* 1/4 cup basil leaves, sliced thinly, lengthwise
* Kosher salt and freshly ground black pepper, to taste

Preparation

1. Preheat the oven to 400ºF. Lightly coat a shallow baking sheet with oil or nonstick spray.
2. Season the chicken with 1 tsp of ChickenShit, and place in a single layer on one side of the oiled baking sheet.
3. In a bowl, add the potatoes, 2 Tbsp olive oil, the other 2 tsp of ChickenShit, and Parmesan. Gently toss to combine the ingredients evenly.
4. Place the pan into the oven and bake until the chicken is cooked through and the potatoes are golden brown and crisp, around 20-25 minutes. Top the chicken with mozzarella when there's about 10 minutes left of cooking time.
5. To make the bruschetta, combine the tomatoes, 2 Tbsp olive oil, balsamic vinegar, garlic, basil, salt and pepper in a bowl. Let that sit while the chicken and potatoes are cooking.
6. Serve immediately, topping the chicken with the bruschetta.
