King Ranch Chicken

This is the first dish I recall my daughter ever having made for me. My expectations were pretty low because I didn't even know she knew her way around the kitchen. Well, it turned out fantastic and I made a pig out of myself.

She is fixin' to move into her first house and she's got a lot of work for ol' Dad to do so I think I'm going to ask her to feed her slaves this dish for all of our labor. Give it a shot, and it makes great leftovers, if any are left.

Ingredients:

* 4 chicken breasts
* Special Shit
* 2 Tbsp oil
* 1 can cream of mushroom soup
* 1 can cream of chicken soup
* 1 can Rotel tomatoes, chopped
* 2 cups grated cheddar cheese
* 8 corn tortillas


Preparation:

Wash and season chicken breasts with Special Shit. Heat oil in a 10 inch skillet on medium high heat. Brown chicken breasts for 4 minutes on each side. Remove chicken to a plate to cool. In a small bowl combine cream of mushroom soup, cream of chicken soup, Rotel tomatoes and 1 cup of grated cheese and mix well. Tear corn tortillas into small pieces and combine with soup mixture in bowl. Spray a 9x11" dish with cooking spray. Cut chicken into cubes and place in the bottom of the 9x11 dish. Pour soup mixture on top of chicken and bake at 375 degrees for 30 minutes. Remove from oven and add 1 cup of grated cheese on top of the mixture and bake for another 15 minutes.
