German Potato Pancakes

In Texas, we have a lot of German influence in our foods, and one of the easiest and most versatile is the potato pancake. This one has our special twist to it, and you can customize it to your heart's content.

Ingredients
* 2 eggs
* 2 Tbsp flour
* 1/4 tsp baking powder
* 1 tsp SpecialShit
* 6 medium potatoes, peeled and shredded
* 1/2 cup finely chopped onion
* 1/4 cup vegetable oil

Directions
1. In a large bowl, beat together eggs, flour, baking powder, and SpecialShit. Then, add in the potatoes and onion.
2. Heat oil in a large skilled over medium heat. Drop a few heaping tablespoonfuls of the mixture into the skillet, and press to flatten. Do this in batches so that they have room to cook, about 3 minutes on each side. Take them out and drain on paper towels when they are browned and crispy.

Tips: These are great with sour cream, applesauce, syrup, cranberry sauce, or anything that you like to eat with potatoes. They're also great with breakfast, lunch, or dinner. And if you're feeling brave, try adding some AwShit!
