Rock Cornish Game Hens

Well I'll tell you folks, I've never had a recipe go over as good as this one. Everyone I have cooked this for has just been crazy about it and wanted the recipe. Hope you enjoy it.


* 2 Rock Cornish Game Hens (or a small cut up chicken)
* shallot
* 2 Tbsp butter
* 2 Tbsp extra virgin olive oil
* Special Shit
* 1/2 cup chicken broth
* 1/2 cup heavy cream
* 1 10oz can Cream of Chicken soup
* parsley
* Pecorino Romano cheese


Half the Game hens and remove the backbone. In an electric skillet set to medium high add the butter, olive oil and the shallot, finely minced. Sprinkle the hens front and back with Special Shit and place in skillet to brown. After browning each side add chicken broth, cream, and Chicken soup. Bring to a boil and reduce to a simmer. Allow to cook covered for 1.5 - 2 hours turning over every thirty minutes. Be careful at the end for the hens will be very tender and try to fall apart.

Turn off heat and grate the cheese over the top of the hens to your taste, sprinkle parsley over the dish and replace lid until cheese melts. Serve with rice or stove top dressing and green beans. Feeds 4.
