Veal Piccata Recipe
(from the kitchen of Terry Wooten)
This stuff tastes just like the really good Veal Picatta in fancy Italian Restaurants. Give it a shot, fairly easy to make, and a lot more healthy than Chicken Fried Steak (recipe for CFS here). Enjoy with red or white wine.
Ingredients:
* 1 lb veal scaloppini
* 1 cup flour
* Special Shit
* 3 Tbsp olive oil (EVO)
* 6 Tbsp butter
* 1/2 lb sliced mushrooms
* 3 cloves garlic, minced
* 1 shallot, minced
* 3/4 cup dry white wine
* 3 Tbsp fresh squeezed lemon juice
* 3 Tbsp capers
* angel hair pasta
Preparation:
1. Pound the scaloppini thin with a meat mallet.
2. Dredge the scaloppini in the flour mixed with 2 tbsp Special Shit.
3. In a skillet with the olive oil and butter heated over medium/high heat brown the scaloppini on both sides- not too much though; it'll be back in the skillet before you are through. Remove veal and drain.
4. In the same pan, saute the mushrooms with the garlic, and shallot.
5. Add the wine, lemon juice, capers and veal back to skillet and simmer for 15-20 minutes.
6. Serve over Angel Hair Pasta cooked according to package instructions.
