 Spicy Spanish Rice Recipe

 

Spicy Spanish Rice

Served as a side dish or even with tortillas, cheese, and Hot Shit salsa, this Spicy Spanish Rice is sure to please!

Ingredients:

  • 1 red onion, chopped fine

  • Olive oil

  • 1 garlic clove, minced

  • 2 cups medium or long-grain white rice

  • 4 cups chicken broth (this amount may vary; check the instructions on the rice packaging to be sure)

  • 1 heaping Tbsp tomato paste

  • 1/4 tsp oregano

  • 1 tsp Aw Shit Seasoning

  • 1/4 cup canned jalapeno slices

  • 2 cans black beans, drained

Coat the bottom of a large skillet with olive oil, and brown the rice over medium-high heat. Add the onion and garlic. Cook this mixture, stirring frequently, for about 4 minutes, or until onions are soft.

Add the chicken broth, tomato paste, and seasonings and stir until tomato paste is blended. Add jalapeno slices.

Bring to a boil, then cover and reduce heat to Low. Cook 15-25 minutes, depending on the instructions on the rice package. Turn off heat and stir in the beans, and quickly cover again, letting it sit for 5 more minutes.
